Each year, the Maryland Science Center opens it's doors to homeschool families. They are many different classes for students to participate in. Grace chose a Neurology Class, which I was able to sit in, and it was very overwhelming, at least for me!! Haha!

What a wonderful time we had at our annually trip to Hershey Park. Grace and Daddy rode most of the roller coasters with Anna joining in for a few. Mommy was on the ground with her feet planted firmly! (Scared of heights!)

Yes, my blog is long over due for a new post....LONG over due! The Spare family had a wonderful, fun filled Summer including 2 vacations to my favorite place: the ocean. I spent my childhood at the beach. Weekends and breaks from school were at the ocean. We lived 10 minutes from the beautiful beaches of the Atlantic, so for 25 years I was a beach bunny! I would love to live closer so that my daughters could spend more time there. Grace is already walking in my foot steps. As soon as we get there, she is in the water for the rest of our time there. I think she grew gills this past visit! Because of this love, we have decided to incorporate Oceanography into a majority of our Science Curriculum. I don’t know who is enjoying it more, me or the girls!

The last 2 days of our visit, a cold front came through so we took advantage of the beautiful bike trail Rehoboth Beach has.

Better Late Than Never!

I am a little late with this post, but, better late than never, right? June 5th we left for a much needed, week long vacation to Bethany Beach, DE. What a fantastic time we had. The girls enjoyed body boarding every day, biking through Assateague Island with the wild ponies, and spending time together as a family. Below are a few pictures from our week.

13 glorious years!!

June 20th marked our 13 year Anniversary. I can honestly say each year gets better and better. Michael and I have both grown in so many ways, and have allowed God to change us and stretch us through the process. And it was all well worth it! I feel so blessed; my life is full!

We just returned from a much needed week visit to Bethany Beach. It was a wonderful, relaxing time. I will be posting pictures shortly, and Grace will let everyone know of our adventures while there! In the mean time, I have made my selection of curriculum for the coming school year and thought I write it out. We will continue to do schooling throughout Summer, just focusing on subjects that need a little attention.

Grace~ Grade 6
Language Skills & Literature:
Both girls are using something new this year, and I am very excited about it! It is Total Language Plus. It incorporates all Language Skills through Literature. A Novel is selected and there is roughly 2 months worth of Lessons included.
Math~ Teaching Textbooks

Anna~ Grade 4th
Language Skills: Anna will also be using Total Language Plus

Math: Anna's learning style is much different than Grace, so I have purchased a few workbooks that incorporate games. We are going to try 15 minutes work, and then a little break, while changing "scenery" for our next time slot.

Studies Together

Science~ Answer's In Genesis : God's Design For...
Our first subject area will be Botany. So excited for this! I have purchased a year membership to Longwood Gardens so that we can incorporate this with our studies.
History~ We will be studying Early American History using David Barton's Drive Through History DVD's and History Pockets.
Bible Study: Karen Andreola's Beautiful Girlhood. I am also looking into the Soul Surfer bible study to possible follow.

Sight & Sound : Joseph!!

Before going to Sight and Sound, we read the story Joseph in the Child`s Story Bible, by Catherine F. Vos. It helped us to understand the play a lot better in the end. What an amazing story about dreams! We then went to Sight and Sound and watched as what we had read came to life! Everything was so lively and real. Pharaoh`s dreams looked so certain, we felt we had had them. The Egyptian homes and palaces looked like they had come right out of Egypt. Me, my Mom, and Anna went there with our good friends the Correllis. The day ended with the most dazzling rainbow! ~Grace

A beautiful day at Longwood Gardens

Today we went to a extraordinary place called Longwood Gardens. The world seemed to stop in place and hold its breath as we walked through this wonderful garden. Flowers in bloom, colossal trees, and a water fall to remember. My soul seemed to shout in abundance "Glory to God in the highest who has formed these marvelous creations!" How can one walk through this place without their heart bursting in ravishment? Me, Anna, and mommy had a great time basking in Gods creations. As I look at Gods glorious creation I feel as though he is beside me, looking too. One can not put into words what joy this garden is filled with. You have to see it for yourself. Smell the tea roses, listen to the branches blow in the breeze. After being here, I feel I have drawn closer to God. As though his presence is among the flowers and the trees. This place is like candy for the heart, soul, and eyes.

Update on chicks and garden

Our girls are growing so quickly, and surprisingly...our fondness for them! They are such sweet girls and how they enjoy Grace & Anna's company. They are very happy and healthy and we look forward to finding eggs sometime around June!
The garden has been tilled with organic humus and has been "marinating" for a few weeks. Plants have been purchased and we will be going in the ground this weekend. I love being out in the garden with my hands in the dirt. For me, it is a peaceful place and I spend that time praying or listening to the girls talk & tell me....well..everything!

So, I have decided to allow my oldest daughter who is an aspiring writing to take over. I will continue to oversee it and occasional write, but she will do most. This will give her the opportunity to practice and cultivate her writing skills.

This Thanksgiving, I was so grateful ti be able to spend with my family in Florida. My father has had a 5 year struggle with prostate cancer and it was nice to be able to visit.

Took a field trip to the Alpaca farm in Spring Grove, PA. We learned about the animals and watched the fleece being weaved. Then, we went to the apple and pumpkin orchard to pick a pumpkin to carve and paint, and of course the girls had to get a whoopie pies!

To celebrate Father's Day and our Anniversary, Michael and I took the girls to the beach for the day. I was a little disappointed, only with the beach. Each time we visit, I choose a different beach in hopes of it being similar to the one back home, only to be saddened. The Northern beaches are NOTHING like the ones back home. It was still a wonderful time!

Yesterday was a busy day. Dr.'s appointments were scheduled since it was Spring Break. Anna had an early morning dentist appt., then both girls had their yearly eye exams. Grace's prescription has changed for the better, and to our surprise, Anna needed glasses for reading!

We are SO desperate for Spring. We want to start our garden, dig in the dirt, hike, and ride our bikes!
We've decided to try a new adventure this year: camping. Yes, tent camping. Michael has so many fond memories of camping with his family, and I have none. We love to bike and hike and this would allow us to venture to further places, and spend quality time together! I can't wait! Any suggestions? Let us know!

Grace had such a wonderful time Saturday the 13th. Since she enjoying sewing and crafting so much, she decided to have a party at Joann's Fabric. The girls decoupaged picture frames, decorated cookies and made bracelets and necklaces, then enjoyed Pizza!! We we're so happy everyone was able to make it due to our current weather conditions! ;-)

We got hit with another major Blizzard. Winds of 50mph, some areas over 5 ft. from snow drifts, and a lot to clean up!! It wouldn't be so bad if we were able to play in it! But, we are thankful that we have heat, our cupboards are full, and everyone is safe. The dogs are taking things in stride. Zora hops through to do her "duty", but Maggie has to , literally, be pushed out the door ;-). Here are a few pictures from today, I'll try to get better ones as was venture out tomorrow. I am a little nervous about the girls going out to play in it: fear of possibly losing one!
Most are in the backyard, but Michael to take one from the roof as he was cleaning off the satellite and checking to see how the roof was doing from all the snow accumulation.

This past weekend the East Coast was hit by a major snow storm. We were home for 2 days, but had a great time. The girls played in the snow and I (being the Florida girl) waved to them from inside and had hot chocolate waiting for them! I was only able to get a picture of the dogs because my batteries died!!

Grace is thoroughly enjoying Home Economics this year and doing quit well. She is sewing, cooking and cleaning. Today she made Snickerdoodles, with little assistance from me. They turned out wonderful, and Daddy said they were the best he's ever had!!! ;-)

Today we went with some friends to the Maryland Science Center where it was a day for homeschool families. We had a wonderful time visiting and then took a walk around the harbor finished with watching fudge being made!!!

We have been having beautiful weather here in Southern PA. Today we took a 13 mile bike ride, yes, that's right 13 miles!!! I never heard one complaint out of the girls. Anna's modo learned today was , "slow and steady wins the race." I was so proud of both of them. The weather was gorgeous; 70 degrees. After our ride we went over to Uncle Bill & Aunt Darla's for dinner, and visited w/ Mike's cousin (Laura)who is due in November. She looks beautiful. It was a great ending to a wonderful day! Hope ya'll we're blessed w/ a beautiful day also! Blessings.

Peach Preserves

Today I made and canned Peach Preserves. Since the orchard is right behind us, I had to take advantage! Here's an easy recipe if interested:
The easiest recipe I have calls for 5 lbs of peeled peaches, cut into pieces, 7 cups of sugar, 1 / 12oz can of crushed pineapple drained, and 1 box of pectin. Put the fruit and sugar in a soup pot on the stove top. Bring to a rolling boil, watching constantly. Reduce the heat to medium, add the pectin, and continue to cook 15 minutes, watching closely. I also added almond extract and cinnamon, but you can omit this step. It makes more of a peach cobbler flavor.Ladle the preserves into your prepared jelly jars...It's really delicious. You can omit the pineapple if your family doesn't like it, it still turns out the same. This jam doesn't get so thick that when you put the spoon in the jar you can bring the jar off the table. It's not runny either. I usually let mine sit for a week or so before getting into it. Once you refrigerate it, it will get a little thicker too if you're worried about it spreading.

I made apple butter today, and the smell of Fall has filled the house! It was such an easy recipe using applesauce and crockpot, I thought I would share. I always find organic applesauce at my discount store, for pennies, and now I have a great recipe! After making this wonderful treat, I canned it for us to enjoy through out Winter; if it lasts that long!

Directions for Making Apple Butter

Yields about 9 - 10 pints
Ingredients and Equipment

* 9 quarts of Applesauce, fresh or canned (See step 1)
* 2 tablespoons of ground cinnamon
* 1 teaspoon ground cloves
* 1/2 teaspoon of allspice
* 4 cups sugar
* 1 Crock pot (slow cooker) 6 quart size (if your crockpot is smaller, just reduce the ingredients proportionately)
Fill the crock pot to within an inch of full with applesauce, mine takes about 5.5 quarts. You will add the remaining applesauce later, in step 5. Now, you CAN do this using a regular large pot on very low heat on the stove, but the crockpot works much better, because its heat is very low. I've never had a batch burn in the crockpot.
Add:

* 2 tablespoons of ground cinnamon
* 1 teaspoon ground cloves
* 1/2 teaspoon of allspice
* 2 cups sugar (the other 2 cups are used in step 4)

Set the crock pot on low or medium heat.

Cover it loosely or use a large pot splatter-guard. It will spatter as it boils slowly, so I also cover nearby surfaces with towels. You don't want to seal it tightly because you want the steam to escape so it can reduce in volume and thicken. A visitor suggests, take a couple of butter knives, and lay them across the top of the crock pot. They are parallel and located about 2/3 of the way out from the center. Then put the lid on these supports, leaving it "covering" the pot and keeping the splatters under control, but, leaving a good gap for steam to escape. I just made a batch and tried this approach, but I used a pair of wooden chopsticks or bamboo kebab skewers - they worked great!

Leave it to cook for 6 - 12 hours. How long depends on the size and power of your crockpot, and how thick you like it, If you want to stir it occasionally, that's fine but not necessary. I let mine go overnight.
It will reduce in volume by about half overnight. As it cooks down (the next morning), add the remaining applesauce (about 2 or 3 quarts) and 2 more cups of sugar. Then let it cook a couple of hours more to mix the flavors.
Blend:
You want a smooth, creamy texture, right? The easiest way is to use a hand-held drink blender. It does a great job of making it smooth. You can also put it into a regular blender, but if you are going to do that, you might want to blend the apple sauce before you put it in the crock pot (it will be much thicker afterwards and won't move in a regular blender). Another visitor says running it through a food mill with a fine screen or through a sieve works, too.
Tips:

* Too thick? if the apple butter cooks down too much or is too thick for your liking, just add a little bit of apple juice and blend it in.
* Not thick enough? Just let it cook some more, with the lid off so the steam can escape!

Now it's ready for canning!!!!

Today marks another exciting year for the Spare girls. We begin our 4th and 2nd year of school. I love the first day of school! I don't know who is more excited, the girls or myself. Now, ask me in April of next year, and I'm sure I will ready to say, "we're ready for Summer!"

It's been awhile, I know. We're enjoying our summer...swimming and activities.
Tomorrow marks 11 years of wedding bliss for Michael and I. I am so honored to be married to the most amazing, Godly man I know. I feel thankful and blessed. Looking forward to many more to come!

Yard Sales!!!

I am participating in Southern Hospitality's yard sale blog. We had a great day at yard sales this Saturday. The entire family went. I had a few things in particular I was looking for, one of them being fall/winter clothes for my 9 yr. old daughter. We hit the jack pot!!! I found a lady selling grace's size for 50 cents a piece! And they were all Old Navy, Limited Too, and Aeropostle (sp). Total I got 14 pairs of pants, 3 sweaters, and 16 long sleeve shirts, all in perfect condition. At another sale, I got a pair of Gap jeans (new) for $2 and a pair of Leather knee high Nine West boots for $3. They look as though they've never been worn! We also found a large wood shelf to use in the garage for shoes for $5. Great Day for us!!

This may be a long story, but it must be told to get the entire picture. We must be careful as to what we tell or allow our 7 yr. old daughter to see and hear. She is a lot like Michael and I were when we were little. I was terrified at night during this age. I can still remember laying in my bed, heart pounding, scared of what may come out. I shared a room with my sister, but that didn't help. So, for the longest time, I remember coming into my parents room and my mother allowing me to set up camp next to her bed. It made all the difference in the world; I felt "safe".
As I came home late one Thursday evening, after worship practice, Michael came up the stairs and proceeded to tell me what had occurred that evening. Do you ever wondering why a man says what he says? I have tried to explain to him about being very selective as to what he shares with them, but there is no filter. He was praying for the girls that evening, they asked a question and he gave them the answer, a very DETAILED scary (for a child) answer. "What were you thinking???", I asked. "I told them the truth", he says. I knew what was to come, and I was going to have to pick up the pieces. Later that night, Anna walks in w/ the biggest crocodile tears, "Mommy, I'm so scared, and praying is not working," as she sniffled her words. So, we have a new addition to our bedroom. Luckily I saved our crib mattress, and as I set it up for her, the look on hr face was priceless. I knew she felt "safe".
So Michael ask, "I guess we'll never have "Mommy & Daddy time" for awhile. My response, "well, maybe next time you'll be a little more careful how much of the "truth" you reveal!

Along w/ cleaning carpets, my new treadmill has been purchased and assembled by my wonderful husband. I am back into my routine of running 5 miles a day. Do I enjoy it???, no, but again, I love the results!!
